A client who is a landscaper gave me a few pounds of delicious organic Heirloom Tomatoes. My kitchen counter is loaded with them!
Any recommendations on what to do with such a plentiful harvest?

Re: What to do with a few pounds of Heirloom Tomatoes?
Sat, September 19, 2009 - 9:49 PMSo many things...
Tomato sauce
Tomato salad
Soup/Stew/Chili - one of my favorites is the tomato-ginger soup from Laurel's Kitchen
Tomato wine (seriously!)
Pizza

Puree and freeze if you cant' figure out what to do with them right now
If they're good sized wrap in puff pastry, fill with grueyere cheese and bake
Slice thin and put on pizza -

Sun, September 20, 2009 - 11:39 AMGreat ideas Todd!
I've gathered my ingredients for sauce. He gave me some fresh basil too, so I'm making a pasta primaveral sauce with basil and fresh veggies i got from the store last night.
Kudos for the chili suggestion, going to try a good veggie chili recipe I've had kicking about for a while. Sometimes the classics are the best.
Great stuffed cheese tomato dish wow that sounds mah-velous!

Re: What to do with a few pounds of Heirloom Tomatoes?
Sun, September 20, 2009 - 4:44 PMHere's a tomato trick I learned this year: take tomatoes about "muffin'size", cut the tops off and scoop out the innards. Mix the innards with eggs, cheese, some chopped herbs. Fill the tomato shells and top with a breadcrumb-Parmesan cheese mixture. Pop these into a muffin pan. Bake at 350 for 20". Voila! A great breakfast or a lovely Sunday brunch!

Re: What to do with a few pounds of Heirloom Tomatoes?
Fri, September 25, 2009 - 10:26 PMmay be too late, but one of my favorite things to do with heirlooms is a pesto-tomato-mozzarella panini on fresh sourdough - so yummy! and I'd definitely give gazpacho a whirl - should be good and sweet. -

Mon, September 28, 2009 - 8:12 AMMy vote would be for gazpacho or pico de gallo. Eat 'em fresh and revel in the flavor and texture. Save the sauces for the romas. -

Tue, September 29, 2009 - 8:26 PMWe had fresh tomato for a week! Mostly sliced thin on pesto pizza. I might be getting some more soon, so I'll try my hand at Gazpacho ;) -

Re: What to do with a few pounds of Heirloom Tomatoes?
Mon, October 12, 2009 - 4:29 PMSimple tomato sauce-
Tomatoes
Garlic
Olive Oil
Salt
Fresh Basil
Maybe pepper
Five ingredients and plenty of them, heat just until it begins to boil. This is one of my favorite things in the world. It doesn't keep for more than a day or two, and is only really good when the basil and tomatoes are fresh. It is simple perfection. Just make sure you aren't shy with the seasonings. Lots of garlic, lots of basil, and probably twice as much olive oil as you'd think you need.

Re: What to do with a few pounds of Heirloom Tomatoes?
Sun, October 18, 2009 - 1:56 PMWhat I do is cut them in half lengthwise, sprinkle them with salt, pepper and olive oil and roast them for about 2-3 hours in a 250 degree oven. You can store them in the fridge in a glass jar with some olive oil. They last about a month, I believe.
