Every year my plum tree bends to almost breaking, and sometimes does break itself under the weight of it's own fruit. Inevitably I end up with some quantity of unripe green plums, which usually go to the compost.
But can I cook with them instead? Does anyone have any recipes or experience doing this?

Thu, June 18, 2009 - 4:33 PMit is a good practice to cull fruit if you have too many developing, where the branches bend to the ground or break off. Remove a bunch of plums when they are small, leaving enough for your future use on the tree to fully ripen.
I like to make fruit jams by halving and pitting a big pot-full of whatever fruit you have (you plums, me loquats AND plums right now), then simmering them with a cup or two of water, covered but stirred often. When the fruit is soft, puree with a hand-blender or regular blender, sieve/strain it back into the same pan and add sugar to your taste (usually more than you imagine!), maybe some squeeze of meyer lemon and some grated rind, or something spicy like cinnamon if you like to flavor it, or just pure fruit, then simmer it down until thickened. Jar up into sterilized jars and can/process properly, or just put in the fridge to eat asap.
also -- using a shortbread/sugar cookie recipe to make tart crust is easy. just bake and then top with your favorite curd or jam or chocolate ganache, and top with sliced or halved fresh fruit (or even partially dehydrated with wet fruit) and a simple glaze. YUM! Plums on lemon curd with plum glaze is great! -

Thu, June 18, 2009 - 6:52 PMI'd make the jam from it, as it would have enough natural pectin in the unripe fruit to jell well on its own without adding any pectin. but no I guess I wasn't thinking straight for the tart... I guess I'd use more ripened fruits, OR maybe you can can some green ones up in simple syrup and use them to top the tart. oh yeah ~ you could also make chutney! I like to make a variety of chutneys, and they are great on smoked or roasted meats, and on roasted veggies, squash and grain dishes.
I also found this recipe for Unripe Plum Stew, but haven't tried it

Thu, June 18, 2009 - 9:58 PMOMG! I Love Persian food ( I had Khorest de fesenjoon and Persian date cake at my wedding), so the blog is a gem of a find!
The stew is just strange enough that I think I'll try it.
I wasn't sure when I first posted if unripe plums are even edible. It's exciting to know they are. I like the chutney idea too.
