so at the farmer's market the other day the fish guys, from santa cruz I think, had turquoise blue fillets of (I think) Ling Cod. Never before have I seen fish FLESH this color - though the outer skin is the same lovely color:

does anyone have any experience with blue fillets of fish?
Is there a flavor difference?
would YOU eat it?? (LOL)
If they have it next week, I'm gonna get some. I was chicken this time.

Tue, August 11, 2009 - 5:09 AMHow cool Chili! I was intrigued so I had a look online and apparently the blue flesh turns white when you cook it (which is kind of disappointing, like how purple carrots turn orange when cooked). Let us know if you do try some out and what it's like! -

It's a fact! moment....When I poked around to find out more about lingcod, I discovered it isn't actually a member of the cod family. -

Fri, August 14, 2009 - 5:39 PMI've always heard that blue is an unappetizing color to eat. Someone told me of a class she taught with little kids on how to make butter. The kids wanted to use food coloring to color their butter after it was made. Those who used blue refused to eat it later. -

Sat, August 15, 2009 - 6:54 AMAh but people have no qualms eating blueberries or blue popsicles! I guess it's all about context and expectation. Not that eating blue fish has anything to do with blue food dye but it was just discovered that a particular blue food dye may actually prevent paralysis in mice with broken spines (and potentially people)...not sure what, if anything, it does to us healthy people though!
Hmmm, it seems there are more purple than actually blue foods (that I can think of anyway)...I eat black rice (which is very dark purple/black), blue potatoes (but they also go more purplish when cooked), lots of blueberries, blue corn chips....there's actually a fair amount of blue foods in my diet! (The organic blueberries from my local farm are my fave blue food at the moment.) -
