Not to start an "is a burger a sandwich" debate but I thought that burgers perhaps deserve their own thread.
One of my all time favorite burgers was one that I first encountered in London, England at a restaurant just at the very end of Portabello Road. It did have mushrooms in it but not Portabellos ;-)
It was a beef burger topped with mushrooms in a bechamel sauce and watercress...divine! I make this for myself at home and it's also delicious with bacon added. Bacon on burgers is one of the very few mixings of different kinds of meat that I actually enjoy.
I'm also a fan of the traditional Aussie burger which involves a slice of pickled beetroot as one of the garnishes (yes, you heard me right, beetroot).

Sun, February 24, 2008 - 1:52 PMI go for the pineapple cheddar steakburger at Kirk's. I'm very annoyed that the Kirk's right near my house turned into yet another Vietnamese noodle house a number of years back. Now I have to go all the way to Palo Alto or Saratoga to get it.
Also, Clark's has something similar that's called the Hawaiian or Hula Burger, something like that. I think it's marinated in Teriyaki as well as having the pineapple and your choice of cheese.

Mon, February 25, 2008 - 12:20 PMI think that the best ones are the ones I make at home on the Weber. We bought a quarter of beef this last fall, so we can trust the grind- also it's grass fed, so it's not got the cholesterol wallop that your grain fed beef has. I form those at about a half pound per person, season them with salt and pepper, and set them aside while I get the coals started. I'll prep the condiments and toppers at this point, like sliced onion,tomato,leaf lettuce,sliced dill pickle,sharp cheddar cheese, pull the mayonnaise,mustard, plum ketchup,worcestershire sauce out on the sideboard. I lay it all out on plates,spread a little mayonnaise on the split buns and grill them crisp first, set them aside under a towel before I put the patties on. I just do them medium rare, I can't bring myself to cook them all the way through, unless someone wants it that way. i figure with the homegrown beef, I don't need to worry about e-coli, since I've been to the slaughterhouse and seen the processing.
I always do a nice,neat quarter turn halfway through for the diamond shaped grill marks, it makes for a beautiful patty, and you get great charbroiled flavor, and really juicy meat.

Here is ONE of my favorite burgers:
Start with fresh ground chuck, mixed with real bacon bits and shredded cheddar cheese, grilled using grill time steak seasoning, served on a fresh bun with a bun size pickle slice, and slice of fresh onion. Sometimes I substitute a slice of avocado and tomato for the pickle and onion...... -

Nationwide Meats (here in Sac) has a rockin' french burger, too. Big as your head. : ) Must have with onion rings. -

You start by sauteing red onions and peppers ( I like yellow sweet ) in olive oil and then shaping and pan frying my meat . I like to use a soft long french roll I grill the roll in the oil that I cooked the veg in put it together and enjoy.
